August always feels like a little bit of everything. We’re soaking up the last weeks of summer while schedules start filling back up, school gets underway, and life begins moving a little faster again. That makes it the perfect time for a dinner that is simple, colorful, filling, and easy to bring together on a weeknight.

This Crispy Sheet Pan Chicken Sausage, Peppers & Potatoes recipe is one of those meals that doesn’t need anything fancy to be delicious. It combines crispy baby Yukon Gold potatoes with roasted peppers and onions and savory chicken sausage for an easy dinner the whole family can enjoy.

And if you’re a crispy-potato person like me, the order matters! I give the potatoes plenty of time in the oven on their own before adding the other sheet pan. Leaving them undisturbed while they roast helps them get those golden, crispy edges while staying soft on the inside.

I also love that everyone can make their plate their own. Set out shredded cheese, sour cream, ketchup, mustard, or your family’s favorite condiments and let everyone add what they like.

So as summer begins winding down, turn on the oven, grab a couple of sheet pans, and enjoy an easy meal made for gathering around the table
